- 8 oz penne pasta
- 1 block (8 oz) feta cheese
- 2 cups cherry tomatoes
- 3 tbsp olive oil
- 3 cloves garlic, minced
- ¼ cup fresh basil leaves
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Drizzle olive oil in a baking dish.
- Add cherry tomatoes and feta cheese to the dish, drizzling with additional olive oil, salt, and pepper.
- Mince garlic and distribute over the tomatoes and feta.
- Bake for 25-30 minutes until tomatoes burst and feta turns golden.
- Cook penne pasta according to package instructions; drain and reserve some pasta water.
- Combine baked mixture with pasta in a large bowl, mixing until well-coated. Adjust consistency with reserved pasta water if needed.
- Garnish with fresh basil before serving.
