- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 2 cups fresh strawberries, pureed
- 2 tsp vanilla extract
- 3 large eggs, at room temperature
Instructions
- Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
- For the crust, mix graham cracker crumbs and melted butter until combined. Press firmly into the bottom of the prepared pan.
- In a bowl, beat softened cream cheese until smooth. Add sugar, sour cream, eggs, and vanilla extract; mix until well blended.
- Puree fresh strawberries and fold some into the cream cheese mixture to create swirls.
- Pour the cheesecake filling over the crust and bake for 55-60 minutes until slightly jiggly in the center.
- Let cool in the oven for an hour before refrigerating for at least four hours or overnight.
