- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/2 cup unsalted butter (melted)
- 2 large eggs
- 1/2 cup all-purpose flour
- 1 cup fresh or frozen strawberries (chopped)
- 8 oz cream cheese (softened)
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
- In a medium bowl, mix melted butter and cocoa powder until smooth. Stir in sugar, then add eggs one at a time until well combined. Add flour and mix until just combined.
- In another bowl, beat softened cream cheese with sugar until creamy. Add vanilla and one egg; mix until smooth.
- Pour half the brownie batter into the pan, layer with cheesecake mixture, and top with remaining brownie batter. Swirl gently with a knife.
- Scatter chopped strawberries on top.
- Bake for 30-35 minutes or until set around the edges but slightly soft in the center. Let cool before slicing.
