- 9 lasagna noodles (no-boil preferred)
- 1 cup fresh lobster meat
- 1 cup large shrimp (peeled and deveined)
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach (lightly sautéed)
- 3 cloves garlic (minced)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant. Add sautéed spinach and set aside.
- In a large bowl, mix ricotta, half of the mozzarella, Parmesan, salt, pepper, and the sautéed spinach.
- In a baking dish, layer a thin layer of the cheese mixture followed by lasagna noodles. Alternate layers of the cheese mixture, lobster chunks, shrimp, and noodles until all ingredients are used.
- Top with remaining mozzarella and Parmesan.
- Cover with foil and bake for 25 minutes; remove foil and bake an additional 15-20 minutes until bubbly and golden brown. Let rest before serving.
