  • 9 lasagna noodles (no-boil preferred)
  • 1 cup fresh lobster meat
  • 1 cup large shrimp (peeled and deveined)
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach (lightly sautéed)
  • 3 cloves garlic (minced)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant. Add sautéed spinach and set aside.
  3. In a large bowl, mix ricotta, half of the mozzarella, Parmesan, salt, pepper, and the sautéed spinach.
  4. In a baking dish, layer a thin layer of the cheese mixture followed by lasagna noodles. Alternate layers of the cheese mixture, lobster chunks, shrimp, and noodles until all ingredients are used.
  5. Top with remaining mozzarella and Parmesan.
  6. Cover with foil and bake for 25 minutes; remove foil and bake an additional 15-20 minutes until bubbly and golden brown. Let rest before serving.
