Ingredients
- 4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 2 cups fresh baby spinach
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 tsp Italian seasoning
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken until golden brown (5-7 minutes per side). Remove from skillet.
- In the same skillet, sauté minced garlic for about 30 seconds until fragrant. Add spinach and cook until wilted.
- Stir in sun-dried tomatoes and gradually add heavy cream, simmering for 3-5 minutes until thickened.
- Mix in Parmesan cheese until melted and smooth.
- Return the seared chicken to the skillet, spooning sauce over each piece. Simmer together for an additional 3-4 minutes.
