- 1 cup mascarpone cheese
- 1 cup strong brewed espresso (cooled)
- 24 savoiardi (ladyfingers)
- 2 tablespoons unsweetened cocoa powder
- 1/2 cup granulated sugar
- 3 large eggs (separated)
Instructions
- Gather all your ingredients on the counter.
- Brew 1 cup of strong espresso and let it cool.
- In one bowl, separate the egg whites from yolks.
- Beat egg yolks with sugar until pale; mix in mascarpone until smooth.
- In another bowl, whip egg whites until stiff peaks form; fold into the mascarpone mixture gently.
- Briefly dip each ladyfinger in cooled espresso and layer them in a dish.
- Spread half of the mascarpone mixture over the ladyfingers, then repeat with another layer.
- Dust generously with cocoa powder on top and refrigerate for at least 4 hours or overnight before serving.
