- 4 (6 oz) salmon fillets
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 4 cloves garlic, minced
- 4 tbsp unsalted butter
- 1 cup heavy cream
- 2 tsp Italian seasoning
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Prepare your ingredients: Rinse salmon and pat dry. Chop garlic and halve cherry tomatoes.
- Sear the salmon: In a skillet over medium-high heat, melt 2 tbsp of butter. Cook salmon fillets for about 4 minutes per side until golden brown. Remove from skillet.
- Make the sauce: In the same skillet, lower heat and add remaining butter and minced garlic. Sauté until fragrant, then add cherry tomatoes until softened.
- Create creamy goodness: Stir in heavy cream and let simmer before adding spinach and Italian seasoning.
- Combine: Return salmon to the skillet, spoon sauce over it, drizzle with lemon juice, and simmer for an additional 2 minutes.
- Serve: Plate salmon topped with sauce alongside pasta or bread.
