Instructions
- Prepare the chili butter by melting butter in a small saucepan over low heat; stir in chili powder and set aside.
- Toast the sourdough slices until golden brown.
- Mash the avocado in a bowl with lemon juice, salt, and pepper until creamy yet chunky.
- Poach the eggs in gently simmering water until the whites are set but yolks remain runny.
- Spread the mashed avocado generously on each slice of toasted bread, place poached eggs on top, and drizzle with chili butter. Serve immediately.
