  • Total Time: 40 minutes
  • Yield: Serves 4

Ingredients

Scale
  • 1 lb beef chuck roast, diced
  • 1 cup long-grain rice
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 2 cups beef broth
  • 1 cup carrots and peas (fresh or frozen)

Instructions

  1. Prep the ingredients: finely chop the onion and garlic, and dice the beef into bite-sized pieces.
  2. In a large pot, heat oil over medium-high heat and sear the beef until browned on all sides.
  3. Remove the beef and sauté onions and garlic in the same pot until translucent (about 3-5 minutes).
  4. Deglaze with soy sauce, scraping up any brown bits from the bottom of the pot.
  5. Stir in the rice and pour in the beef broth. Bring to a gentle boil, then reduce heat to low.
  6. Cover tightly and simmer for 20-25 minutes or until rice is tender and absorbs liquid completely. Fluff before serving.
