- 1 lb beef chuck roast, diced
- 1 cup long-grain rice
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1/4 cup low-sodium soy sauce
- 2 cups beef broth
- 1 cup carrots and peas (fresh or frozen)
Instructions
- Prep the ingredients: finely chop the onion and garlic, and dice the beef into bite-sized pieces.
- In a large pot, heat oil over medium-high heat and sear the beef until browned on all sides.
- Remove the beef and sauté onions and garlic in the same pot until translucent (about 3-5 minutes).
- Deglaze with soy sauce, scraping up any brown bits from the bottom of the pot.
- Stir in the rice and pour in the beef broth. Bring to a gentle boil, then reduce heat to low.
- Cover tightly and simmer for 20-25 minutes or until rice is tender and absorbs liquid completely. Fluff before serving.
