- 8 oz halloumi cheese, cut into thick slices
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 medium zucchini, sliced into thick rounds
- 1 small red onion, cut into wedges
- 1 cup cherry tomatoes
- 2 tbsp extra virgin olive oil
- 2 tbsp fresh oregano or basil, chopped
- Salt and pepper to taste
Instructions
- Prepare the halloumi and vegetables by cutting them into even-sized pieces.
- If using wooden skewers, soak them in water for 30 minutes. Thread the halloumi and vegetables onto the skewers, alternating for a colorful presentation.
- Drizzle olive oil over the skewers and season with salt, pepper, and chopped herbs.
- Preheat your grill to medium-high heat (around 400°F / 200°C).
- Grill the skewers for about 10-12 minutes, turning occasionally until they are charred and cooked through.
- Serve warm with additional herbs or a squeeze of lemon juice.
