- 4 medium-sized russet or Yukon gold potatoes

Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and peel the potatoes if desired, then cut them into uniform bite-sized cubes.
- In a mixing bowl, combine potato cubes with minced garlic, olive oil, salt, and pepper. Toss until well coated.
- Sprinkle grated parmesan cheese over the potatoes and toss again for even distribution.
- Spread the seasoned potatoes in a single layer on the prepared baking sheet. Bake for 25-30 minutes until golden brown and crispy.
- Serve warm, garnished with additional parmesan if desired.
