- 4 boneless, skinless chicken breasts (1.5 lbs)
- 1/2 cup fresh basil pesto
- 4 ciabatta rolls
- 8 oz fresh mozzarella cheese (sliced)
- 1 large tomato (sliced)
- 2 cups arugula or spinach
Instructions
- Preheat the grill or skillet over medium heat. Season chicken breasts with salt and pepper; cook for 6-7 minutes on each side until golden brown and fully cooked.
- Remove chicken from heat, let rest for a few minutes, then spread pesto generously on each breast while warm.
- Slice ciabatta rolls in half and toast until golden brown.
- Assemble sandwiches: place mozzarella on the bottom half of each roll, add pesto-covered chicken, top with tomato slices and arugula.
- Cover with the top half of ciabatta and press gently to hold together.
- Serve immediately with chips or a light salad.
