- 1 cup long-grain white rice
- 2 cups low-sodium vegetable broth

Instructions
- Rinse the rice under cold water until the water runs clear.
- In a rice cooker, combine rinsed rice, vegetable broth, lime juice, garlic powder, salt, and pepper. Stir gently.
- Close the lid and cook on normal setting until done (about 10-15 minutes).
- Let the rice sit for an additional 5 minutes with the lid closed.
- Fluff with a fork and mix in the chopped cilantro before serving.
