- 1 lb boneless, skinless chicken thighs
- 2 tbsp shawarma spice blend
- 2 tbsp extra virgin olive oil
- 3 cloves fresh garlic, minced
- 2 tbsp lemon juice
- 4 whole wheat tortillas or pita bread
- 1 cup plain Greek yogurt
- 3 tbsp tahini paste
- 1 cup grated cucumber
- 2 cups lettuce leaves
Instructions
- Marinate the chicken: In a bowl, mix olive oil, garlic, shawarma spice blend, lemon juice, salt, and pepper. Add chicken thighs and coat well. Cover and refrigerate for at least one hour or overnight.
- Prepare your grill or skillet: Heat over medium-high heat. Lightly oil if using a grill.
- Cook the chicken: Grill or pan-sear marinated chicken thighs for about 6-7 minutes on each side until browned and cooked through (internal temperature should reach at least 165°F).
- Slice the chicken: Let the cooked chicken rest for five minutes before slicing into thin strips.
- Assemble your wraps: Layer sliced chicken on tortillas with grated cucumber and lettuce. Drizzle with a sauce made from yogurt mixed with tahini.
- Roll it up tightly and serve immediately.
