- 1 to 1.5 pounds fresh cod fillets
- 2 tablespoons fresh ginger, grated
- 1/3 cup low-sodium soy sauce
- 2 tablespoons honey (or maple syrup)
- 2 cloves garlic, minced
- 2 tablespoons fresh lime juice
- 1 tablespoon toasted sesame oil
- 2 green onions, chopped
- 2 tablespoons vegetable oil
Instructions
- Prepare the marinade by whisking together soy sauce, honey, grated ginger, minced garlic, lime juice, and sesame oil in a bowl. Reserve half for basting.
- Marinate the cod fillets in the remaining marinade for 20-30 minutes.
- Heat vegetable oil in a non-stick skillet over medium-high heat. Add cod fillets skin-side down and cook for 3-4 minutes until golden brown.
- Flip the fillets gently and baste with reserved marinade; cook for another 3-4 minutes until cooked through.
- Sprinkle green onions on top during the last minute of cooking for added freshness.
