- 4 medium bell peppers (any color)
- 1 lb ground beef (or turkey/chicken)
- 1 cup cooked rice (white or brown)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove seeds.
- In a skillet, sauté onions until translucent. Add garlic and ground meat; cook until browned.
- Stir in cooked rice, tomato sauce, salt, pepper, and herbs; simmer for 5 minutes.
- Fill each pepper with the mixture and place upright in a baking dish.
- Cover with foil and bake for 30 minutes. Remove foil, top with cheese, and bake for an additional 5 minutes until melted.
