Ingredients
- 2 medium carrots, diced
- 2 stalks celery, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes (with juices)
- 4 cups low-sodium vegetable broth
- 1 cup green beans, chopped
- 2 medium potatoes, diced
Instructions
- Wash and chop all vegetables into bite-sized pieces.
- In a large pot over medium heat, add olive oil and sauté the onions and garlic until fragrant (3-4 minutes).
- Add the carrots and celery; cook for about 5 minutes until softened.
- Stir in the diced tomatoes, potatoes, green beans, and pour in the vegetable broth.
- Bring to a boil; then reduce heat to low, cover, and simmer for about 30 minutes until vegetables are tender.
- Adjust seasoning with salt and pepper as desired before serving.
