Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish with olive oil.
- Chop mixed vegetables into bite-sized pieces; if using frozen veggies, thaw and drain well.
- In a large bowl, combine the chopped vegetables with cream of mushroom soup and half the grated cheddar cheese until evenly coated.
- Pour the mixture into the prepared baking dish and spread it out evenly.
- Top with remaining cheddar cheese and breadcrumbs; drizzle olive oil over the top.
- Bake for 30-35 minutes or until bubbling and golden brown.
