- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 1 ½ tsp baking powder
- ½ tsp salt
- ½ cup unsalted butter (softened)
- 2 large eggs (room temperature)
- 2 tsp pure vanilla extract
- ½ cup whole milk
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a medium bowl, whisk together the flour, baking powder, and salt until combined.
- In a large mixing bowl, beat the softened butter and sugar using an electric mixer on medium speed until light and fluffy (about 3 minutes).
- Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually mix the dry ingredients into the wet mixture alternately with milk, starting and ending with the dry ingredients; mix until just combined.
- Spoon the batter into prepared muffin tins, filling each liner about two-thirds full. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow to cool completely before frosting.
