Instructions
- Cut the chicken into bite-sized pieces; season with salt and pepper.
- Heat oil in a large skillet over medium-high heat; cook the chicken until golden brown (about 5–7 minutes).
- Add chopped onion and bell peppers; sauté until tender (3–4 minutes).
- Mix soy sauce, vinegar, sugar, and cornstarch with water; pour over chicken and vegetables.
- Simmer for 5 minutes until sauce thickens; stir in pineapple chunks and heat through.
- Serve over rice or noodles.
