Ingredients
- 2 pounds beef chuck, cut into bite-sized pieces
- 4 medium potatoes, diced
- 3 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups low-sodium beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Season the beef with salt and pepper. Sear in a skillet over medium-high heat until browned.
- Transfer the beef to a slow cooker. Add potatoes, carrots, onion, and garlic.
- In a bowl, whisk together beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper; pour over meat and vegetables.
- Cover and cook on low for 8 hours or high for 4 hours until the meat is tender.
