Ingredients
- Whole chicken (3-4 pounds)
- Olive oil
- Kosher salt
- Freshly ground black pepper
- Fresh rosemary and thyme
- Lemon juice
- Garlic cloves
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse and pat dry the whole chicken.
- Rub olive oil all over, then season generously with salt and pepper both inside and out.
- Stuff the cavity with fresh herbs.
- In a small bowl, combine lemon juice and minced garlic; pour over the chicken and let marinate for at least one hour.
- Place the marinated chicken breast-side up in a roasting pan and roast for about an hour or until juices run clear from the thigh.
- Allow to rest for 10 minutes before carving.
