- 3–4 boneless skinless chicken breasts
- 1 cup basil pesto (store-bought or homemade)
- 1 cup shredded mozzarella cheese
- 1 cup cherry tomatoes (halved)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Spray a baking dish with nonstick cooking spray and arrange chicken breasts in a single layer.
- Drizzle olive oil over the chicken and season with salt and pepper.
- Spread pesto evenly over each chicken breast.
- Top with shredded mozzarella cheese and scatter halved cherry tomatoes around the dish.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of at least 165°F (74°C) and the cheese is bubbly.
