- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tablespoons olive oil
- 4 cloves fresh garlic, minced
- 12 oz fusilli or penne pasta
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach
Instructions
- Sear the chicken in olive oil over medium-high heat for about 5 minutes per side until golden brown. Remove and set aside.
- In the same pot, sauté minced garlic for 1 minute until fragrant.
- Add chicken broth and bring to a boil. Stir in pasta and return the chicken to the pot. Cover and simmer for about 10 minutes until pasta is al dente.
- Lower heat and mix in heavy cream and Parmesan cheese until creamy.
- Stir in fresh spinach until wilted, about 2 minutes.
- Serve hot with extra sauce drizzled on top.
