Ingredients
- 8 oz fusilli or penne pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup crumbled feta cheese
- 1/4 cup extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
- In a large bowl, combine cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.
- In a separate bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Add the cooled pasta to the vegetable mixture and pour the dressing over it. Toss gently to coat.
- Cover and refrigerate for at least one hour before serving.
