- 2 medium sweet potatoes
- 1 cup shredded cheddar cheese
- ½ cup sour cream or Greek yogurt
- ½ cup cooked bacon bits (or turkey bacon)
- 2 tablespoons chopped chives or green onions
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and scrub sweet potatoes thoroughly. Poke holes in each potato with a fork.
- Place sweet potatoes on the prepared baking sheet and bake for 45-50 minutes until tender.
- Remove from oven, cut open lengthwise, and fluff insides with a fork.
- Layer shredded cheese inside to melt, then top with bacon bits and sour cream.
- Garnish with chopped chives before serving hot.
