  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 3 large fresh lemons (juiced and zested)
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a bowl, mix flour and half of the sugar. Stir in melted butter until crumbly. Press into the bottom of the prepared dish.
  3. Bake the crust for about 20 minutes until lightly golden.
  4. In another bowl, whisk together eggs, remaining sugar, lemon juice, and zest until combined. Gradually add remaining flour while whisking until smooth.
  5. Pour the filling over the baked crust and return to the oven for 20-25 minutes until set.
  6. Allow to cool completely before slicing into squares and dusting with powdered sugar.
