Ingredients
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter (melted)
- 3 large fresh lemons (juiced and zested)
- 2 large eggs
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a bowl, mix flour and half of the sugar. Stir in melted butter until crumbly. Press into the bottom of the prepared dish.
- Bake the crust for about 20 minutes until lightly golden.
- In another bowl, whisk together eggs, remaining sugar, lemon juice, and zest until combined. Gradually add remaining flour while whisking until smooth.
- Pour the filling over the baked crust and return to the oven for 20-25 minutes until set.
- Allow to cool completely before slicing into squares and dusting with powdered sugar.
