- 1 lb boneless chicken thighs
- 4 tbsp unsalted butter
- 1 can (14 oz) whole peeled tomatoes
- 1 medium onion, diced
- 2 tbsp fresh ginger, grated
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp garam masala
- Salt & pepper to taste
- Fresh cilantro for garnish
Instructions
- 1. Prep your ingredients: Dice the onion and mince the garlic and ginger.
- 2. Sauté aromatics: In a large pan over medium heat, melt the butter. Add onions and sauté until translucent (about 5 minutes).
- 3. Add spices & tomatoes: Stir in garlic, ginger, cumin, and coriander for a minute. Add canned tomatoes and simmer until blended.
- 4. Cook the chicken: Raise heat slightly and add chicken thighs. Brown on all sides (6-8 minutes).
- 5. Add creamy goodness: Pour in heavy cream while stirring to create the sauce. Simmer for an additional 10 minutes.
- 6. Garnish & serve: Sprinkle fresh cilantro before serving over rice or naan.
