- 1 cup sweet corn (fresh or canned)
- 1 ripe avocado, diced
- ¼ cup fresh cilantro, chopped
- 2 cups cooked rice or quinoa
- Salt and pepper to taste
Instructions
- Marinate the shrimp in olive oil, garlic, lime juice, salt, and pepper for about 15 minutes.
- In another bowl, combine avocado, sweet corn, cilantro, and a squeeze of lime juice to prepare the salsa.
- Preheat the grill to medium-high heat.
- Grill marinated shrimp for 2-3 minutes on each side until pink and opaque; avoid overcooking.
- Assemble your bowls by placing rice or quinoa at the base, topping it with grilled shrimp and avocado corn salsa.
