- 1 cup low-sodium chicken broth
- 1 can (14.5 oz) diced tomatoes with herbs
- 2 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Clean your crockpot thoroughly.
- Place the chicken breasts at the bottom of the crockpot.
- Layer the chopped onion and minced garlic over the chicken.
- Pour in the chicken broth and diced tomatoes; stir gently to combine.
- Sprinkle Italian seasoning, salt, and pepper over the top.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken shreds easily.
