- 1 can (14 oz) crushed tomatoes
- ½ cup coconut cream or heavy cream
- Fresh garlic and ginger
Instructions
- 1. Marinate the chicken: Combine yogurt and spices in a bowl. Add chicken, coat well, cover, and refrigerate for at least one hour.
- 2. Broil the chicken: Preheat oven to broil. Place marinated chicken on a baking sheet and broil for 8-10 minutes per side until slightly charred.
- 3. Prepare the sauce: Sauté onions in oil until translucent. Add garlic and ginger, then stir in crushed tomatoes and salt.
- 4. Blend the sauce: Once tomatoes are soft, blend until smooth.
- 5. Add creaminess: Stir in coconut cream or heavy cream and simmer for about 15 minutes.
- 6. Combine: Add broiled chicken to the sauce, cooking through before serving.
