- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup long-grain rice
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup low-sodium chicken broth
- 1 cup shredded cheddar cheese
- 2 cups frozen mixed vegetables
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Spray a baking dish with nonstick cooking spray.
- In a large bowl, combine raw chicken pieces, rice, cream of mushroom soup, and chicken broth until well mixed.
- Add garlic powder, onion powder, salt, and pepper; stir to combine.
- Fold in frozen mixed vegetables without thawing them.
- Pour the mixture into the prepared baking dish and spread evenly.
- Cover with foil and bake for 40 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10-15 minutes until golden brown.
