Ingredients
- 2 cups cooked, shredded boneless skinless chicken breasts
- 4 medium flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup diced bell peppers (red or green)
- 1/2 cup sliced onions (yellow or red)
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Oil for cooking
Instructions
- In a skillet over medium heat, sauté diced bell peppers and onions until soft. Add shredded chicken, cumin, salt, and pepper; stir until heated through.
- Place one tortilla flat and layer half with cheese and the chicken mixture. Fold the tortilla over.
- In the same skillet, add oil over medium heat. Cook the folded quesadilla for 3-4 minutes on each side until golden brown.
- Let cool slightly before slicing into wedges and serve with salsa or sour cream.
