Ingredients
- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 large flour tortillas
- ½ cup bell peppers, sliced
- ½ cup onions, sliced
- 1 tablespoon olive oil
- Salsa and sour cream for serving
Instructions
- Heat olive oil in a skillet over medium heat. Add sliced onions and bell peppers; sauté until tender (about 5 minutes).
- Add shredded chicken to the skillet; stir well and heat through (about 3 minutes). Set aside.
- Place one tortilla in the skillet; sprinkle half of the cheese on top. Layer half of the chicken mixture, then add more cheese. Top with another tortilla.
- Cook for 3-4 minutes per side until golden brown and crispy. Repeat with remaining ingredients.
- Cut into wedges and serve hot with salsa and sour cream.
