- 3–4 garlic cloves
- 2 tablespoons olive oil

Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- Season chicken thighs generously with salt and pepper.
- Chop bell peppers, zucchini, and onion into bite-sized pieces.
- Mince garlic cloves and sauté all vegetables in olive oil over medium heat until slightly softened (about 5 minutes).
- Place seasoned chicken in the baking dish with sautéed vegetables and drizzle with additional olive oil.
- Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and vegetables are tender.
