Ingredients
- 1 lb lean ground beef
- 1 medium onion, chopped
- 8 oz fresh mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 cup sour cream
- 1 tbsp Dijon mustard
- Egg noodles (for serving)
Instructions
- Heat oil in a large skillet over medium heat. Sauté chopped onion until translucent, then add minced garlic and sliced mushrooms until softened.
- Push vegetables to one side of the skillet and add ground beef. Cook until browned and crumbly.
- Stir in Dijon mustard and pour in beef broth; simmer while scraping the skillet bottom.
- Reduce heat to low; stir in sour cream until combined smoothly.
- Cook egg noodles according to package directions; drain and mix into the sauce.
- Serve hot, garnished with fresh parsley if desired.
