Ingredients
- 1 lb beef sirloin or tenderloin
- 8 oz fresh mushrooms
- 1 medium yellow onion
- 2 cloves garlic
- 1 cup low-sodium beef broth
- 1 cup sour cream
- 1 tbsp Dijon mustard
Instructions
- Slice beef into thin strips against the grain. Thinly slice mushrooms and onion; mince garlic.
- In a large skillet, heat olive oil over medium-high heat. Sauté onions until translucent (about 3 minutes), then add mushrooms and cook until browned (about 5 minutes).
- Push vegetables to one side, add seasoned beef, and cook until browned (about 4 minutes).
- Stir in garlic; cook for another minute before adding beef broth. Bring to a simmer.
- Reduce heat to low, stir in sour cream and Dijon mustard until well combined.
- Serve over egg noodles or rice, garnished with fresh parsley if desired.
