- 1 lb lean ground beef
- 8 corn tortillas
- 2 cups red sauce (homemade or store-bought)
- 1 cup shredded cheddar cheese
- 1 medium onion, finely chopped
- 1 tsp cumin
- 1 tsp chili powder
- Sour cream (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, sauté the chopped onion until translucent. Add ground beef and cook until browned, about 5-7 minutes.
- Stir in cumin, chili powder, and half of the red sauce; simmer for 3-4 minutes.
- Warm tortillas in a skillet or microwave for easy rolling.
- Spoon the beef mixture onto each tortilla, sprinkle with cheese, roll tightly, and place seam-side down in a baking dish.
- Pour remaining red sauce over enchiladas and top with extra cheese.
- Bake uncovered for 20-25 minutes until bubbly and golden brown.
