- Green or Brown Lentils

Instructions
- Finely chop carrots, celery, onion, and garlic.
- In a large pot, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes), then add garlic.
- Add rinsed lentils, cumin, and paprika; stir for 1 minute until fragrant.
- Pour in diced tomatoes with juices and vegetable broth. Bring to a boil, then reduce to a simmer.
- Cover and cook for 25-30 minutes until lentils are tender but not mushy. Stir occasionally.
- Stir in chopped parsley before serving. Adjust seasoning to taste.
