- 1 lb boneless chicken thighs
- 3 tbsp unsalted butter
- 1 cup canned tomato puree
- 1/2 cup heavy cream
- 1 tbsp fresh ginger, grated
- 4 garlic cloves, minced
- Spices: cumin, coriander, garam masala
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Prep ingredients by finely chopping garlic and ginger, and measuring spices.
- In a skillet over medium-high heat, melt butter and sear the chicken until golden brown (5-7 minutes per side); then remove from the skillet.
- In the same skillet, sauté garlic and ginger until fragrant (1-2 minutes).
- Stir in tomato puree, cumin, coriander, garam masala, salt, and pepper; cook until thickened (about 10 minutes).
- Reduce heat and slowly stir in heavy cream; simmer for 10 minutes.
- Return chicken to skillet; simmer together for another 5 minutes to meld flavors.
