  • 3 tbsp unsalted butter
  • 1 cup canned tomato puree
  • 1/2 cup heavy cream
  • 1 tbsp fresh ginger, grated
  • 4 garlic cloves, minced
  • Spices: cumin, coriander, garam masala
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Prep ingredients by finely chopping garlic and ginger, and measuring spices.
  2. In a skillet over medium-high heat, melt butter and sear the chicken until golden brown (5-7 minutes per side); then remove from the skillet.
  3. In the same skillet, sauté garlic and ginger until fragrant (1-2 minutes).
  4. Stir in tomato puree, cumin, coriander, garam masala, salt, and pepper; cook until thickened (about 10 minutes).
  5. Reduce heat and slowly stir in heavy cream; simmer for 10 minutes.
  6. Return chicken to skillet; simmer together for another 5 minutes to meld flavors.
