- 3–4 boneless, skinless chicken breasts
- 1 cup freshly grated parmesan cheese
- 1 cup breadcrumbs
- 1 tsp garlic powder
- 2 eggs
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with garlic powder and half of the parmesan cheese.
- Dredge each chicken breast in flour, dip into the egg wash, then coat thoroughly in the breadcrumb mixture.
- Place the breaded chicken in the prepared baking dish and drizzle with olive oil.
- Bake for 25-30 minutes until golden brown; add remaining parmesan cheese during the last five minutes of baking.
- Let rest for five minutes before serving.
