- ⅓ cup vegetable oil
Instructions
- Preheat oven to 350°F (175°C). Prepare a muffin tin with liners.
- In a bowl, whisk together flour, sugar, baking powder, and poppy seeds until combined.
- In another bowl, mix eggs, milk, vegetable oil, lemon juice, and zest until blended.
- Gently fold wet ingredients into dry ingredients until just combined.
- Fill muffin cups two-thirds full and bake for 18–20 minutes or until golden brown.
- Let cool for five minutes in the pan before transferring to a wire rack.
