Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together softened butter and sugar until light and fluffy.
- Mix in lemon zest, lemon juice, and vanilla extract until combined.
- In another bowl, whisk together flour, baking powder, and salt; gradually add to the wet mixture until just combined.
- Drop rounded tablespoons of dough onto ungreased baking sheets about two inches apart.
- Bake for 10-12 minutes until edges are golden but centers are soft. Cool slightly before transferring to wire racks.
