- 1 cup all-purpose flour

- 1 cup whole milk (or almond/oat milk)
- 2 large eggs
- 2 tablespoons melted butter
- 1 cup fresh huckleberries
Instructions
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, beat the eggs and mix in the milk and melted butter until smooth.
- Gently fold the wet ingredients into the dry ingredients until just combined.
- Carefully fold in huckleberries without crushing them.
- Heat a non-stick skillet over medium heat and pour in 1/4 cup of batter for each pancake.
- Cook until bubbles appear on top (about 3-4 minutes), then flip to cook until golden brown.
- Serve warm with maple syrup or whipped cream.
