  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1 cup fresh strawberries (pureed)
  • 1 tsp vanilla extract
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup butter (melted)
  • 3 large eggs

Instructions

  1. Preheat oven to 325°F (160°C) and lightly grease a 9-inch springform pan.
  2. In a bowl, mix graham cracker crumbs and melted butter; press firmly into the bottom of the pan to create the crust.
  3. Beat cream cheese until smooth; gradually add sugar, then stir in sour cream and vanilla extract until combined.
  4. Add eggs one at a time on low speed, mixing just until incorporated.
  5. Puree fresh strawberries and fold into half the batter to create strawberry swirls.
  6. Pour half of the plain filling into the crust, dollop with strawberry mixture, and swirl gently with a knife.
  7. Bake for approximately 55 minutes or until slightly jiggly in the center. Cool before refrigerating for at least four hours.
