- 16 oz cream cheese (full-fat)
- 1 cup granulated sugar
- 1/2 cup sour cream
- 1 cup fresh strawberries (pureed)
- 1 tsp vanilla extract
- 1 1/2 cups graham cracker crumbs
- 1/2 cup butter (melted)
- 3 large eggs
Instructions
- Preheat oven to 325°F (160°C) and lightly grease a 9-inch springform pan.
- In a bowl, mix graham cracker crumbs and melted butter; press firmly into the bottom of the pan to create the crust.
- Beat cream cheese until smooth; gradually add sugar, then stir in sour cream and vanilla extract until combined.
- Add eggs one at a time on low speed, mixing just until incorporated.
- Puree fresh strawberries and fold into half the batter to create strawberry swirls.
- Pour half of the plain filling into the crust, dollop with strawberry mixture, and swirl gently with a knife.
- Bake for approximately 55 minutes or until slightly jiggly in the center. Cool before refrigerating for at least four hours.
