  • ½ cup refined coconut oil (melted)
  • ½ cup fresh lime juice
  • 1 can (13.5 oz) coconut cream (chilled)

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine almond flour, melted coconut oil, and maple syrup until crumbly. Press firmly into the bottom of a tart pan.
  2. Bake the crust for 10-12 minutes or until golden brown. Allow it to cool.
  3. In another bowl, whisk chilled coconut cream and lime juice until smooth. Adjust sweetness with more maple syrup if desired.
  4. Pour the filling over the cooled crust and smooth out with a spatula.
  5. Cover and refrigerate for at least 2 hours or overnight.
