- 1 ½ cups almond flour
- ¼ cup maple syrup
- ½ cup refined coconut oil (melted)
- ½ cup fresh lime juice
- 1 can (13.5 oz) coconut cream (chilled)
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine almond flour, melted coconut oil, and maple syrup until crumbly. Press firmly into the bottom of a tart pan.
- Bake the crust for 10-12 minutes or until golden brown. Allow it to cool.
- In another bowl, whisk chilled coconut cream and lime juice until smooth. Adjust sweetness with more maple syrup if desired.
- Pour the filling over the cooled crust and smooth out with a spatula.
- Cover and refrigerate for at least 2 hours or overnight.
- Slice into wedges, garnish with lime zest or mint leaves, and serve chilled.
