- 2 ripe avocados

Instructions
- Toast the whole-grain bread until golden brown.
- While the bread is toasting, cut and mash the avocados in a bowl with lemon juice, salt, and pepper until creamy.
- In a non-stick skillet over medium heat, cook eggs sunny-side up (3-4 minutes) or poach them (about 3 minutes).
- Spread mashed avocado generously on each slice of toast, place an egg on top, and season with additional salt, pepper, and red pepper flakes if desired.
