  • 1/2 cup whole wheat breadcrumbs
  • 1/2 cup bell pepper, finely chopped
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp salt (or to taste)
  • 2 tbsp olive oil (for cooking)
  • 4 whole wheat buns

Instructions

  1. In a large bowl, mash the black beans until mostly smooth but slightly chunky.
  2. Sauté the chopped bell pepper and onion in a pan over medium heat until softened, about 5 minutes. Add minced garlic in the last minute.
  3. Combine mashed beans with sautéed veggies in the bowl. Stir in whole wheat breadcrumbs, cumin, and salt until well mixed.
  4. Form the mixture into four patties. If too crumbly, add a splash of water or extra breadcrumbs.
  5. Heat olive oil in a non-stick skillet over medium-high heat and cook each patty for about 5 minutes on each side until golden brown.
  6. Toast whole wheat buns while cooking patties if desired. Assemble burgers with your favorite toppings.
