- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup whole wheat breadcrumbs
- 1/2 cup bell pepper, finely chopped
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp salt (or to taste)
- 2 tbsp olive oil (for cooking)
- 4 whole wheat buns
Instructions
- In a large bowl, mash the black beans until mostly smooth but slightly chunky.
- Sauté the chopped bell pepper and onion in a pan over medium heat until softened, about 5 minutes. Add minced garlic in the last minute.
- Combine mashed beans with sautéed veggies in the bowl. Stir in whole wheat breadcrumbs, cumin, and salt until well mixed.
- Form the mixture into four patties. If too crumbly, add a splash of water or extra breadcrumbs.
- Heat olive oil in a non-stick skillet over medium-high heat and cook each patty for about 5 minutes on each side until golden brown.
- Toast whole wheat buns while cooking patties if desired. Assemble burgers with your favorite toppings.
