- 4 large bell peppers (red, yellow, or green)
- 1 pound lean ground turkey
- 1 cup cooked rice (white or brown)
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 1 cup tomato sauce
- Optional: shredded cheese for topping
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, sauté chopped onion in oil until translucent. Add garlic and cook for another minute.
- Add ground turkey to the skillet, cooking until browned (about 7-10 minutes).
- Stir in cooked rice and tomato sauce; season to taste. Simmer for about five minutes.
- Cut tops off bell peppers and remove seeds; place them upright in a baking dish.
- Stuff each pepper with the turkey mixture, topping with cheese if desired.
- Bake in the oven for approximately 25 minutes until the peppers are tender.
