- 4 large bell peppers (any color)
- 1 pound ground beef or turkey
- 1 cup cooked white or brown rice
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1 cup shredded mozzarella or cheddar cheese
- Salt and pepper to taste
- 2 tsp olive oil for sautéing
Instructions
- Preheat your oven to 375°F (190°C). Lightly spray a baking dish with nonstick cooking spray.
- Slice the tops off the bell peppers and remove seeds. Stand them upright in the baking dish.
- In a skillet over medium heat, heat olive oil and sauté onions and garlic until fragrant (about 3 minutes). Add ground meat, seasoning with salt and pepper; cook until browned.
- Stir in cooked rice and tomato sauce until well combined; taste for seasoning.
- Stuff each bell pepper generously with the filling and top with shredded cheese.
- Cover the dish with foil and bake for 30 minutes. Remove foil during the last 10 minutes to brown the cheese.
