  • 4 large bell peppers (any color)
  • 1 pound ground beef or turkey
  • 1 cup cooked white or brown rice
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella or cheddar cheese
  • Salt and pepper to taste
  • 2 tsp olive oil for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly spray a baking dish with nonstick cooking spray.
  2. Slice the tops off the bell peppers and remove seeds. Stand them upright in the baking dish.
  3. In a skillet over medium heat, heat olive oil and sauté onions and garlic until fragrant (about 3 minutes). Add ground meat, seasoning with salt and pepper; cook until browned.
  4. Stir in cooked rice and tomato sauce until well combined; taste for seasoning.
  5. Stuff each bell pepper generously with the filling and top with shredded cheese.
  6. Cover the dish with foil and bake for 30 minutes. Remove foil during the last 10 minutes to brown the cheese.
